Broccoli Cheddar Soup

It is Fall, Ya'll! Fall means soup. I don't know that it was every very soup-y at my house growing up, we ate soup on occasion, but not all the time. I don't remember Fall being soup centered. However, I kinda want Fall to be soup centered! Since Kyle is in basketball and gone most nights for dinner, I think I'm going to make a new soup at least once a week until December.

This week's soup was: Broccoli Cheddar. I'm sure my mom (who is a fabulous little chef) made some growing up, but I can't ever remember eating it as a kid. I decided to give it a run this week and yum. I've noticed a pattern with recipes that I try from Pinterest, that is, they are never quite as good as they say they will be. This could very much be just because I often don't actually follow the recipe. I usually read the recipe over and then wing it or change things. With this soup, I didn't follow the recipe exactly, but it still turned out dang yummy--that's my kind of recipe.

I love Broccoli. While I was a missionary I even had a doctor tell me to stop eating so much broccoli. This post isn't meant to be an ode to broccoli, but man is it good stuff. So mixing Broccoli and Cheese, nothing can go wrong. Maybe my next post will be an ode to cheese.

The recipe only called for one head of broccoli, I put in two. I added what chicken stock I had left in my cupboards, which wasn't as much as the recipe called for, I didn't finely mince my onions, and I left out the nutmeg and allspice. A 1/4 pound of Gouda from the deli and a handful of sharp cheddar cheese later and we were rocking.

You should try it. Easy. Yummy. Warm. Fall-y.

  2. I never made broccoli soup because my first pregnancy turned me completely off of broccoli! But, we ate tons of soup: potatoe cheese, chicken noodle, mushroom and now butternut squash (thanks to you, Liv). All homemade, of course, with homemade noodles. Oh--turkey soup; and even dill pickle soup once (not a fan).
